Easy Lemon curd recipe

Lemon curd is a tangy & sweet, delicious treat and it is so easy to make! I admit I have been known to eat it directly out of the jar with a spoon, but it is so good on so many things!

Try using it on cakes, fruit & granola, ice cream, cheesecake, crepes, stuffed french toast, in the center of your homemade donuts, in your fruit dip recipe or one of my favorite ways: as the center of my lemon blueberry dutch baby. The possibilities are really endless!

Lemon Curd Ingredients:

  • 4 lemons- the juice and zest
  • 1/2 cup organic sugar
  • 4 large eggs + 2 yolks (adding the extra yolks helped mine thicken)
  • 6 tablespoons unsalted butter

Directions:

  1. Add all ingredients to a glass bowl.
  2. Heat ingredients in bowl over a small sauce pan of water simmering over medium-high heat, whisking continuously until thickened, about 10 minutes.
  3. Let cool and store in the refrigerator for up to one week.
